This is an excellent dish that can serve as either a side or as a filling main. It is rich with spicy Latin flavor and is a great dish when you are craving something savory.
You will need:
1 medium onion
1 bell pepper
2 cloves garlic
4 tablespoons tomato paste
1 (15.25 ounce) can kidney beans (drain, but save the liquid)
1 cup uncooked white or brown rice
2 teaspoons chili powder
1. Heat water in a large saucepan over medium heat. Sauté onion, bell pepper and garlic. When onion is translucent, add salt and tomato paste. Cook for two minutes, then add the beans and uncooked rice.
2. Pour the Kidney Bean liquid and 2 cups of water into the mixture. Cook until liquid is absorbed and rice is cooked.
3. Enjoy! Also great with avocado!
