This is the perfect side dish to add a tangy batch of vegetables. It is great for picnics, BBQs, or any time you want a delicious sugar-free side dish!
1 small onion
1 small carrot
1 small head of purple cabbage
3 tbs of white vinegar
3 tsps of Stevia
3 tbs of Vegan Mayonnaise (here is a great recipe if you want to make it yourself!)
Dice the onion and cabbage into bite size pieces. Using a medium-hole grater, grate the carrot to add flavor, color and texture.
To create the dressing, combine the vinegar, stevia and mayonnaise in a bowl, and mix until creamy.
In a medium-sized mixing bowl, combine carrot, onion, cabbage and dressing. Mix well, chill between 30 minutes to 4 hours and serve.
