This meal is a simple mixture of various vegetables. It can be tweaked and changed according to dietary needs, or preferences. It serves as a delicious meal to ensure you are getting all of you plant-based nutrients!
- 1 punnet of Cherry tomatoes
- 1 medium orange Sweet potato
- 1 yellow Bell Pepper
- 1 medium yellow onion
- 250 g of Brussel Sprouts
- 1 medium Beet
- Lemon juice
- Cracked pepper
Preheat oven to 350 F or 180 C.
Line an oven tray with aluminum foil.
Slice cherry tomatoes in half.
Peel and dice the sweet potato and beet
Slice the bell pepper, and onion.
Arrange vegetables in a single layer on the oven rack and bake until potatoes and beets are fork tender.
Season, if desired, with lemon juice, salt and pepper, and serve!
