This is an excellent soup to use for a low calorie, filling entrée that excellent for all seasons!
Cabbage Artichoke Soup
- ½ small white or purple cabbage
- 1 medium onion
- 3 cloves garlic
- 1 medium carrot
- 250g frozen artichoke hearts
- Chili powder
- Vegetable broth
- Seasoning to taste
Wash and peel carrot, onion, and garlic.
Using a sharp knife, dice all vegetables into bite-size pieces (as large or as small as you would like.)
In a large soup pot, combine broth, vegetables and seasoning. Simmer on low for 30 minutes or until all vegetables are fork tender.
Serve hot with crackers or bread of choice.
