Harvest Chili

  • 2 lbs of Japanese Pumpkin, or your favorite type of squash
  • 1 large tomato
  • 15 oz. of garbanzo beans (homemade are best)
  • 1/3 cup golden or dark raisins (homemade are best)
  • 1 yellow onion
  • 32 oz vegetable stock (homemade is best)
  • 3 cloves of garlic
  • 3 tbs cinnamon
  • 3 tbs cumin
  • cayenne pepper (to taste)
  • 2 tbs olive oil


Dice the onion and sautee in olive oil until translucent.  Finely chop the garlic and throw in to begin seasoning.   Peel and seed the tomato and squash and mix into the mixture.  Add the vegetable stock, raisins, drained beans and seasonings.  Simmer until vegetables are tender.  Serve and enjoy!
