Cinnamon Baby Cakes

I created this recipe after a very intense craving for a donut and three episodes of Chopped.  This is a sugar-free pastry that gives just a little bit of a cake donut feel.

***Before Primeotarian – Replace Flour with Almond or Coconut Flour***

Ingredients

2 Cups of Flour  (for a lower glycemic index, use whole wheat flour)

2 Eggs070613211050

4 tbls Butter/Margarine softened

1/4 Cup Granulated Sweetener

2 tbls Cinnamon

Water

Preheat oven to 350 degrees.  Combine flour, eggs, and  2 tbls margarine.  Mix together to create a dough.  Sprinkle in a little sweetener and cinnamon (not the servings listed)  for flavor.  Add water as needed to keep dough from becoming crumbly.

Drop dough by the spoonful onto a greased cookie sheet. For a more donut appearance, take a large spoonful of dough and roll into a line, curl into a circle and it will bake together. Bake at 350 for ten (10) minutes.

Melt the remaining 2 tbls of margarine in a small dish.  In a small bowl, combine cinnamon and sugar.

Pull the pastries out of the oven, and while still hot, brush the melted butter over the top and heavily sprinkle the cinnamon sugar mixture over the tops of the baby cakes.

Once cool enough to eat, enjoy!
